Happy hour is here!  Enjoy this new series featuring local cocktail creations from creative bartenders and mixologists at various Knoxville establishments.  Today we’re featuring Sapphire, a downtown staple delivering fine food + fancy drinks.  Try your hand at the recipe below and enjoy a Pegu Club Cocktail, and consider stopping by Sapphire on your next visit to Knoxville – cheers!

Pegu Club Cocktail

  • 2oz Tanqueray Gin
  • .75oz Orange Curaçao
  • .75oz Lime Juice
  • 1-2 dashes Orange Bitters, such as Regan’s or Fee Brothers
  • 1-2 dashes Angostura Bitters, as garnish
  • Lime Wedge

Method: Combine all ingredients with Ice, except Angostura, into a Shaking Tin and shake until condensation appears on the outside of the tin.  Strain into a coupe or martini glass.  Garnish with a lime wedge and 1-2 dashes of Angostura Bitters.
